"Whether it is prepared with Beaufort, Comté or other cheeses, the Savoyard fondue remains an essential dish that is served on our tables from the first cold days of autumn. It is a rich and tasty dish that calls for a white wine with a good aromatic power to stand up to it. Although regional pairings with Savoy wines work very well, let's move away and join the older Jura massif for the Chardonnay in the Arbois appellation from Domaine Rolet. This is a white wine whose amplitude is carried by a few months' maturation in oak barrels. Floral notes complete the fondue's aromatic palette and bring the necessary freshness to soothe the richness of the dish and leave the palate clean after each sip. Slight notes of dried fruit complete the harmony of the wine with the meal."

The alternative for red wine lovers :

Domaine Auchère AOP Sancerre 2021

Denis Desplanches, wine merchant CAVAVIN in Lyon Monplaisir (69), For all those who want to explore food and wine pairing, to get away from the mineral white wine and offer their table a red wine with the Savoyard fondue, I suggest the red Sancerre Auchère. It comes from a small 2 hectare plot, with slopes of up to 50%, and from the hillside landscape of Sancerre, in the centre of France, department of Cher. The fruit of a 100% limestone terroir, made from the Pinot Noir grape variety, as it should be in the AOP, this wine has a clear, transparent colour with ruby tints and violet nuances. The nose is structured and complex, evoking aromas of blackcurrant, red fruits, notably morello cherry. The palate shows a harmony of mineral finesse, the limestone terroir speaks to us, with tannins that are both tight and melted, and the Morello cherry aroma prevails; the characteristic finish is slightly smoky. The elegant minerality of this wine will perfectly suit the regressive fatness of the autumn cheese fondue. Enjoy!"
